Upside Down Banana Date Cake With Orange Blossom Water

The inspiration for this recipe comes from Morocco. The last 3 years I often go to Marrakech to visit my friend. This is a real Wahallah for spice-lovers. There is a reason that ‘Ras el hanout’ – the spice that contains more than 20 different spices – is the most used spice mix in every Arabic kitchen.

What I really like in Marrakech is that they work with seasonal products. In the summer, if strawberries and raspberries are in season, in every street corner you’ll see small outdoor shops who sells them. The quality is exquisite.

This upside-down cake contains a date-sesame layer on top and the crunchy oat layer at the bottom that gives some extra texture. But you can choose which side you want to serve it!

Ingredients :

  • 200 g All-Purpose Flour

  • 6 g baking powder

  • 240 g melted butter

  • 200 g sugar

  • 60 g full fat yoghurt

  • 4 eggs (room temperature)

  • 2 mashed banana’s (very ripe)

  • 100 g of sesame seeds

  • 21 soft Medjool dates

  • 100 g oats (mixed in a food processor)

  • 80 g grilled walnuts

  • 2 tablespoons of orange blossom water

  • 1 tablespoon of cinnamon

  • 1 teaspoon of salt

Extra materials: Scale, bowl, spring form of 24 cm, baking paper, whisker, food processor



Directions:

  1. Melt the butter in a saucepan and let it cool down. Take 40 g of the melted butter and put aside for later.

  2. Mix the sugar with the melted butter and add the eggs 1 by 1.

  3. Mix the flour with the salt, cinnamon, and baking soda. Add this to the butter-sugar-egg mixture.

  4. At least, add the mashed banana, yoghurt, walnuts and orange blossom water to the mixture.

  5. Cover the spring form with baking paper. Poor in the sesame seeds until the bottom is completely covered (see photo). Arrange the Medjool dates on top.

  6. Poor the cake-mixture on top of the dates. Mix the oats with the 40 g melted butter. Sprinkle this on top of the cake dough (see second photo). This will give it a crunchy touch.

  7. Put the cake in a preheated oven of 170°C for 40 minutes (or until the crust is golden brown).

  8. After 10 minutes take the cake out of the spring form and let is cool down on a cooling rack.
