Masala Chai Drink
This Chai drink is perfect for a comforting moment. You can’t call it a syrup because their is not much sugar involved.
I usually grate a bit of fresh ginger in a glass, poor over -/+2 cm of the chai drink and finish with some foamed oat milk. A sprinkle of cinnamon and relax!
Ingredients (for 1 jar) :
· 2 cinnamon sticks
· 1 thumb of fresh ginger
· -/+ 12 peppercorns
· 10 cardamom pods
· 3 star anises
· -/+ 10 cloves
· 1/8 of grated nutmeg
· 3 teaspoons of black tea
· 200 g sugar
· 800 ml water
Directions:
1. Roughly blend all the spices with a mortar or use a blender. It’s ok if they’re some big chunks.
2. Place the spice- mix with the water & sugar into a pot on medium heat. Bring to a boil and then let this gently simmer for at least 15 minutes.
3. Add the black tea and let this soak for 5 minutes.
4. Strain the chai drink through a fine-meshed sieve and pour into a clean jar with a tight-fitting lid.
5. If you want a chai latte poor 1-2 cm of the mix in a glass (I add a bit of grated fresh ginger) and poor over some hot foamed (plant based) milk. Finish with a dust of cinnamon and relax!
